This type of cuisine is very popular amongst young Generation like students especially in Indian cities.




 This  Paneer Fried Rice  is a delicious variation of the plain old Indo Chinese Fried Rice. It bulks up the vegetarian weeknight meal option with a good dose of protein in the form of perfect oven-baked paneer cubes.
for paneer : 
400g paneer, cubed
1 tablespoon grated ginger
1 tablespoon minced garlic
freshly cracked black pepper
1 tablespoon olive oil
for the sauce

3 tablespoons tomato ketchup
1 tablespoon dark soy sauce
1 tablespoon vinegar
1 tablespoon chilli sauce or Sriracha
1/2 teaspoon sea salt flakes
1/4 teaspoon white pepper



prepare for the fried rice



2 tablespoons olive oil
1 tablespoon grated ginger
1/2 small red onion, finely diced
1 small carrot, diced
1 tablespoon chopped coriander root and leaves
12 green beans, chopped in 2cm pieces
1/2 small green capsicum, diced
1/2 cup packed, shredded cabbage
2 spring onions, thinly sliced (green and white parts)
4 cups cooked Basmati rice (* see footnotes)
fresh coriander or micro herbs and extra spring onions, to garnish


INSTRUCTIONS




Pre-heat oven to 200C (convection)/ 180C (fan-forced). Place paneer, ginger and garlic, pepper, oil in a small bowl. Toss gently to coat the paneer evenly. Line a rimmed baking sheet with baking paper. Spread paneer cubes on the preared tray. Bake in the oven for 15 minutes, the cubes comes light brown colour and
Prepare the sauce, by mixing all ingredients for the sauce in a glass jar orsmall bowl
Heat a carbon-steel wok oil on high. Add oil, ginger, onion and carrot. Stir-fry for a minute until onion is glazed.
Add coriander root, capsicum ,beans, and cabbage. Stir-fry for another minute until veggies are glossy.
Add the cooked Basmati rice with spring onion, paneer and sauce to the wok. Using a flat turner (or potato masher), quickly hack the rice and toss and stir-fry until everything is evely coated with the sauce and piping hot (about 2-3 minutes).
Remove from heat. Garnish with micro-herbs/coriander and extra spring onions. Serve hot.

To Cook The Basmati Rice – Place uncooked rice in a medium bowl. Rinse and drain with cold water several times until the water runs clear (I save this rinsing water in a larger bowl and use it to water houseplants). Soak rice in cold water for 30 minutes. Drain the rice and add it to a sieve. Briefly rinse the rice again, a couple of times. Add rice and water to a heavy bottomed saucepan in a 1:2 ratio (1 cup rice + 2 cups water) along with some salt. For THIS recipe, I cooked 1.5 cups rice and three cups water with 1 teaspoon sea salt flakes. Bring the water to a boil. Reduce heat to low.

 Cover with a lid and simmer for 10 minutes. Turn off heat at the top of 10 minutes and put aside (still covered) for five minutes. Now, open the lid and plump up the rice with a fork. The rice is now able to eat or be utilized in a stir-fry.

Method of preparation - Gajar Halwa

Heat ghee at some point of a wok, add carrot, saute it for jiffy .Add milk, cook the carrot in milk for 30-forty five minutes till the milk dries and preserve stirring it occasionally.

Add sugar, almonds, cashew, raisins, pistachios, green cardamom powder, cook the halwa until the milk has absolutely reduced.

You’ll need:



Carrot & Moong Dal Soups for weight loss¼ cup carrots chopped
1/8 cup Moong dal washed and well drained. You can use lentils if you prefer
1/8 cup onions
1 tomato
1/8 cup skimmed milk
½ tsp cumin seeds
2 cloves
1 tsp olive oil
4 cloves garlic chopped small
Black pepper to taste (optional)
first add the olive oil to a pan and putting in the garlic and onions. Sauté them until they start to turn brown.

now You can then add in the carrots and sauté for a further 2 minutes.

Separately you need to wash your moong dal and roast them until you can smell their unique aroma. You can then put them in a large bowl, add the cooked vegetables and 1 ½ cups of water.

Once stirred the mixture goes into a pressure cooker until 3 whistles have blown on a high flame. Then reduce the heat and cook for another 3 minutes.

Once it can be coled you can blend if you wish to get a smoother soup.

To finish, lightly fry the cloves  and cumin seeds. Pour over your soup and enjoy.

This mixture is  to make 2 cups; you can adjust the ingredients to do more if you like.

Cauliflower soup :

Cauliflower,is one of the most nutritious and easily available vegetables.  it is  called  phool gobhi in Hindi also According to the data by the United States Department of Agriculture, 100 grams of cauliflower has only 25 calories. It is right choice  to keep your calories in check while trying to lose weight.



You will need



10 -12 cauliflower florets, 1 chopped onion, 2 small chopped potatoes, olive oil, five garlic cloves, cream and vegetable stock.


How to make



Take a pan and saute garlic and onion until brown. Now add potato, cauliflower florets and vegetable stock and bring to boil. Add cream and cook until you feel the texture has become creamy. To make it more smooth you can blend the mixture and serve hot.

1.Take a large mixing bowl; combine all ingredients, except flour.
2.Now, you can add the flour slowly and mix all the ingredients well to form cookie dough.
3.Keep the  cookie dough in the refrigerator for 1 hour to cool it.

4.Now, preheat the oven to 160 celsus and roll the dough into 1-inch of  round balls.
5.Place the each dough ball on an ungreased cookie sheet and bake a batch for 10-12 minutes.
6.Remove each batch from the oven and allow them to cool on a cookie sheet until the each cookie is hardened.

2 unsalted butter
1/2 flour
1 baking powder

Making Method for  Chocolate Nero Cookies


1.Toast the almonds in the oven until light golden brown colour and once cool, grind finely and set aside.

2.Set a stainless steel bowl over a double boiler, and melt the chocolate and butter together, stirring frequently.

3.Once completely melted, remove from the heat.

4.In a separate bowl, combine the eggs and sugar.

5.Beat on medium speed about 5 minutes, or until the mixture is pale and frothy.

6.Slowly pour the chocolate mixture into the eggs mixing well to blend.

7.Add the flour, baking powder and almonds to the chocolate and eggs and mix just until smooth dough is created.

8.Refrigerate the dough for two hours.

9.Heat the oven to 325 degrees F.

10.Remove the dough from the refrigerator and take small pieces about the size of large olives and roll into a ball.

11.Roll each ball first into the granulated sugar, then into the powdered sugar and place on a parchment covered baking sheet.

12.Continue to use up all of the dough in the same manner.

13.Bake the cookies for  just  15 minutes or until they expand and begin to crack.
